Farmers' Markets Popularity Increasing
"Jerry Cayford attributes the markets' popularity to a consciousness being raised about the importance of helping the local economy and supporting agriculture.A member of the board of directors of Brunswick Main Street, Cayford has lent a hand in the reorganization of that city's farmers market.
What used to be one booth run by a professional management company has turned into a producer-only market where the farmers sell their goods in person."

A Better Choice
"There are flours made from a variety of other sources besides wheat, including white or brown rice, potatoes, beans and sweet potatoes. Johnson's "flour" is a mix of rice, potato starch and tapioca flours. For artisan breads she may use brown rice flour or millet. She uses xanthan gum or guar gum as a gluten substitute. Gluten is what makes cakes and breads light and airy."
